I’m planning to connect my Sport SX to a GNS420. What functionality do I get with the ARINC439 that I can’t do with the serial connections?

ARINC-429 transfers the approach deviation data and allows you to use the EFIS to adjust OBS in waypoint OBS mode. Without it you can't display the GPS approach deviations or have the EFIS track them with the autopilot function (including vertical, if your SX has vertical autopilot functions). The RS232 connection only transfers GPS position and basic flight plan data like identifiers and coordinates.

Will the EFIS display the 420 flightplan?

Completely off-topic: If you have a 420W (WAAS), and if you think you might want to install ADSB-out sometime later: While you're inside the rear connector on the 420W for the Sport hook up, install a pin and 6 feet of wire to an unused RS232 out port (later it will supply gps data to the ADSB-out). You'll thank me later. By the way, those 420 pins are high density ones.

Yes, as simple waypoints. It will display the waypoint identifiers and connect them with straight lines. The 420 does not transfer information about early turns, holding patterns, procedure turns, or other curves, so that is not displayed.
