How would one connect multiple current sensors?

I am using two 50 A sensors. One on the output of the alternator and one on the output of the battery. I know I can connect one of them to the EIS and assume the other one will also be connected to the EIS.

Will I be able to monitor both current output information on the HX?

Each one would connect to an Aux input, typically on the EIS. You would use the same scale factor and offset for each. On the HX, you would configure the Aux Function for one of them as "Amp" and the other as "Amp2". Then you can configure data boxes and bar graphs to show Amp and Amp2.
