Wondering if I can use a single OAT probe and splice the lines together for 3 boxes... EIS and 2 AHRS?
Also, manual mentions protecting OAT wire runs from radios, ignition, etc. Mine may run in a bundle with pitot heat and the magnetometer wiring runs. Is this a problem?

You only need to run the wires for the OAT to the EIS. Then the temp data will be carried through the serial interface to the EFIS screens. The screens can then do their work for TAS and other functions.
