The Fuel total bar graph is on the top left corner of the Engine page and it is labeled "Fuel Total". it also will be in the bottom left on the PFD when you have the engine bar across the bottom.

The logbook fuel used doesn't seem to match that from flow - is it derived differently? If so, how?

They're different because the logbook only shows time, and fuel used, during 'flight'. Somewhere in the setup you defined 'flight', probably when gps ground speed was over 30 knots or something like that.

Anyone know where this setup is? I spent 40 minutes looking through all of the options regarding 'flight' and can't find anything like the EIS 4000 where you set an RPM>XXX to start timing.

I think I mis-spoke. I think it's 25 knots ground speed but is not user adjustable.
